Vanilla Sponge Cake

This is a deliciously fluffy sponge cake recipe. It is simple, light and moist which also serves as a base for any layered cakes,suitable for any occasions !!

Ingredients

  • 200 gmsSelf-rising flour
  • 175 gms ( at room temp)Butter
  • 175 gmsCastor Sugar
  • 3 Nos.Eggs ( medium sized)
  • 1 tspVanilla Essence
  • 1/2 tspBaking Powder
  • 1 tbspMilk

Method

  1. Step 1

    Preheat the oven for 10 mins at 180 degrees centigrade.

  2. Step 2

    Oil and line the baking tray with non-stick baking parchment paper.

  3. Step 3

    Keep all the ingredients ready.

  4. Step 4

    Sift the self-rising flour with baking powder.

  5. Step 5

    Cream and blend the butter, sugar and vanilla essence with a hand blender and gradually add eggs one by one into the bowl beating them well after each addition.

  6. Step 6

    Add sifted self raising flour and baking powder to the mixture  gradually folding in  the  milk and blend well until the mixture is light and fluffy.

  7. Step 7

    Add the mixture to the tin and gently tap the tin.

  8. Step 8

    Bake it for 35 mins on 180 deg centigrade until firm to touch or until the skewer inserted in the middle of the cake comes out clean.

  9. Step 9

    Allow the cake  to cool down completely and then cut into desired pieces.
