Fish
Surmai also known as King fish / mackerel is a very flavourful ,tasty and alluring fish. This version of Fish fry has a Malwani flavour to it with the use of Kokum and malwani masala. For the coating Rice flour and Rava is used, thus it tastes crispy and amazing with the soft fish inside. You can gulp down the whole piece on its own it tastes that yummy.
Marinate the surmai pieces with salt and Kokum extract/ Lemon juice for 5 minutes.
Now add in the coriander chilli paste, ginger garlic paste and malwani masala and rub it on each piece of the fish to coat them well. You may also add a little more kokum extract along with the kokum pieces.
Marinate the fish pieces atleast for 1/2 an hour before you start frying it (the more you marinate the better)
For the Coating
Mix Rice flour, rava ( semolina), malvani Masala and salt in a plate. You may use plain rice flour as well and skip the semolina. It tastes equally amazing !!
Coat the marinated surmai pieces with the coating.
Heat some oil on a skillet or a frying pan and shallow fry the fish. ( Do not over heat the oil or the coating might burn. Also take care the fish is fried on a slow flame on both sides )
Additional Tips :-
I used big sized surmai, however you can use whatever size is available .The procedure remains the same .
For the kokum juice/extract you may soak few kokums in very little water. Alternatively you can also make use of ready made kokum extract.
